Lemon Loaf with Keto Sweetener Icing

Ingredients 

Loaf Batter:

3/4 cup Nothing Naughty Ground Blanched Almonds

3/4 cup flour (substitute with Ground Blanched Almonds as a keto and gluten-free option—the result may not rise as much, but it will still be just as delicious!)

3/4 cup coconut sugar 

2 lemons zested 

2 tsp baking powder 

1/4 tsp salt 

1 juice of a small lemon 

1 cup greek yoghurt

2 eggs

2 tsp vanilla essence

 

Icing: 
1/2 cup Nothing Naughty Keto Sweetener

1/2 cup greek yoghurt 

Juice of 1 lemon

1 tsp vanilla essence

 

Directions: 

Preheat your oven to 180 degrees.

Mix your dry ingredients (plus lemon zest) in a bowl.

In another bowl, whisk your wet ingredients.

Combine together and mix well.

Pour into your loaf tin (Nothing Naughty Bread Tin is the perfect size).

Cook for 30-40 minutes, making sure to check with a skewer regularly. It is ready when the skewer comes out clean.

While your loaf is cooking, mix your icing ingredients together and put in fridge until loaf has cooled. Top your loaf and enjoy!
